Pork Sirloin Roast with Apple Chutney
(smoked and spiced pork roast + nutty chutney)
Serves 4

A pork sirloin roast is a cut that shouldn’t be overlooked. It takes well to big spice flavors.

What you need:
For Pork Sirloin:
3-4 lbs Chairman’s Reserve® Bone-In Pork Sirloin Roast
Cool Smoke Everything Rub
½ cup carrot, chopped into 1” pieces
½ cup celery chopped into 1” pieces
½ cup yellow onion, cut into large dice
4 cloves garlic, mashed
3 tablespoons olive oil
3 Bay leaves
1 cup pork or chicken stock
½ cup honey
2 teaspoons of chipotle puree

For Apple Chutney
Makes 1/2 quart
2 Granny Smith apples, peeled and diced
¼ cup vinegar
½ medium white onion, julienne
¼ cup walnuts, crushed
1 ounce sugar
1 teaspoon salt
¼ teaspoon pepper
½ teaspoon red mustard seeds
1 teaspoon peanut oil

What to do:
1. Cook Pork Sirloin Roast: Season Pork Sirloin Roast with 3 tablespoons Cool Smoke Everything Rub and refrigerate for 1-2 hours. Prepare smoker or grill (2 Zone Technique) and smoke pork sirloin roast at 225º F for 1 hour to put some smoke on the roast, while not cooking the meat much. Preheat oven to 350º F. Meanwhile, add oil to heavy bottomed Dutch oven and heat over medium heat. Add carrots, celery, onion and garlic to hot oil, stirring frequently to avoid burning the vegetables. Once the vegetables have browned a little, place smoked pork sirloin into the Dutch oven on top of the vegetables. Add the bay leaves and stock, cover with lid and place in the pre-heated oven. Cook until pork reaches an internal temperature of 140º F, which will take somewhere between 45-90 minutes.


2. Prepare Chutney: Sauté onions in peanut oil on medium heat until translucent. Add apples and sauté another 2 minutes. Add remaining ingredients and lightly simmer for 20 minutes. Apples should NOT be mushy.


3. Prepare Glaze: While the pork is cooking, mix the honey and chipotle puree.


4. Finish Pork Sirloin Roast: When the pork has cooked to 140º F internal temperature, remove from oven and remove lid. While pork sirloin is resting, glaze with honey chipotle mixture.

To Serve: Once the pork sirloin has rested, slice thinly and serve with Apple Chutney and warm buttery rolls.
