Cool Smoke is the name of my competition barbecue team, which I formed in 2004. Originally, I became involved with competition, as another way to learn more about cooking with fire.
My first team mate was my neighbor, Kendall Lamp. Eventually, Cool Smoke would consist mostly of my father, George, and I cooking, although we would have other friends and family help us at larger contests –like Memphis in May. At our 1st contest, we won ribbons for 2nd place pork and 7th place brisket, which kind of set the hook! Over the next 15 years, we would go on to have great successes and be a journey that has taken me all over the world and one I could have never have imagined.
