Tuffy Stone and Special Guest Shane McBride will teach this class together. Shane is also a French trained chef and pitmaster. Shane has run some of best kitchens in New York He also a partner at Pig Beach, which has locations in New York and Florida. Shane's barbecue team Ribdiculous Bar-B-Krewe won overall grand champion at the 2025 Memphis In May World Championship barbecue contest.
This school will be a combination of hands-on, classroom lecture and demonstration, geared to helping you make better barbecue. Tuffy and Shane will teach grilling and barbecue techniques. Go over meat selection and trimming. Making rubs and sauces. Teach about brines, mops, and spritzes. Go into fire management, cooking with charcoal and wood. There will be offset smokers to cook on, as well Weber Kettles, Weber Searwood Pellet Grill and Weber Smokey Mountain Smokers. Students will cook pork ribs and chicken , and will teach how he cooks beef brisket and pork butts. There will be 2 different recipes for all four meats. Shane and Tuffy will get into detail on their philosophies about cooking barbecue and grilling, that helped them be so successful on the competition circuit. Questions and experiences abound in this informal, comfortable setting. Limit 36 students. This class includes a continental breakfast, lunch, snacks, drinks, a Hors D'oeuvres reception. Class will be held in Henrico, Virginia (Richmond).

Saturday Class Day will start at 10am Tuffy and Shane will teach a comprehensive approach, for Cooking, that have won the biggest contests in the country. The most important element to learn from this class is how to cook better barbecue in any situation. This will enhance your knowledge and overall ability to prepare award winning barbecue, whether it is at a contest or in your backyard. In this class, you will hands-on cook pork ribs, chicken , and Tuffy & Shane will teach how to cook beef brisket and pork butts, using a number of recipes. There will be 2 recipes for each of the 4 meats, Chicken, Pork Ribs, Pork Shoulder, and Beef Brisket.
