Join us, as we grill our way through the seasons, using smoke like a seasoning. This new cooking class series, is a departure from the barbecue classes we’ve taught in the past, where the focus was on the typical meats barbecued . "Season’D with Smoke" will be focusing on more composed dishes rather than a single protein. For example , take a main protein with a kiss of smoke or charred on a wood fire or slow braised in a smoker and pair it with accompanying vegetables, starches and sauces. This can be as simple as a brined whole chicken cooked on a rotisserie over coals with cumin scented carrots slow roasted in the smoker and finished off with some classic Alabama white BBQ sauce. That made me hungry just writing it! Our end goal is to open your BBQ toolbox and use your grills and smokers to the fullest, along with hopefully catching the curiosity bug that bit Tuffy and Shane on their culinary travels.
This school will be a combination of hands-on, classroom lecture and demonstration, geared to helping you make better meals on the grill. Tuffy and Shane will teach grilling and barbecue techniques, some of which are inventive . like smoking fish in a paper bag. A few key mantras in this series, are cooking foods at the peak of their season, giving the perfect amount of smoke, and exploring food items that are not just the classic bbq meats. These classes are perfect those, who have already mastered how to cook the perfect brisket of pork ribs, and looking to explore what next! We will go into a deep dive fire management, cooking with charcoal and wood. Some times you want big smoke and sometimes, just a hint. Every seasonal class will have 5 courses, where the whole dish is thought out. We will not only treat the meats as the star, but the same attention will be placed on the sides , garnishes, and sauces. Shane and Tuffy are blending their culinary experiences with their passions of cooking with fire. There will be a variety grills and smokers to cook on,,, including offset smokers , Weber Kettles, Weber Searwood Pellet Grill and Weber Smokey Mountain Smokers. This class is taught in an informal, comfortable setting. Limit 36 students. This class includes a continental breakfast, hot and cold drinks, and the 5 courses or dishes that we teach, will be served. Class will be held in Henrico, Virginia (Richmond).
Saturday Class Day will start at 10am and end at about 5:30.
Spring Class Menu
Grilled bread with smoked soft cheese, wood fired spring peas, bread & butter pickled ramps and smoked peppercorn “lucky” honey.
Brown sugar and whiskey glazed smoked pork belly with Hasselback potatoes, grilled wild greens and chanterelle mushrooms
Rockfish smoked in a paper bag with alubia bianca beans, Edwards country ham, green beans and a charred leek butter
Smoke roasted lamb saddle stuffed with spring greens, grilled asparagus, charred lemon, “farroto” with meadow creek “Appalachian cheese” and mint salsa verde
Smoked spring cherry crisp with kirsch whipped cream
